Skinny Broccoli Salad

Broccoli is the star of this tasty salad and it’s easy to see why when you read this long list of health benefits. It’s one of our favorite superfoods and is a great source of vitamins K and C, folate, potassium, and fiber. All of these nutrients working together help keep your weight in check and also prevent diseases like cancer. Another healthy, and tasty ingredient in this healthy summer side dish are antioxidants known as “polyphenols”. Even if you can’t pronounce it, you’ll want to get some in your diet since these nutrients prevent many types of cancer, including lung, pharynx, endometrial, pancreatic, prostate and colon cancers. Wow!

Cucumber Avocado Rolls

This dish is always a summer favorite since it has cooling cucumber as the main ingredient. But besides keeping your body cool and hydrated, cucumbers help flush out toxins while infusing your body with potassium, magnesium, and loads of B vitamins. Paired with everyone’s favorite, avocado, these cucumber rolls are super delicious. Avocados are cholesterol free, have healthy fats which our bodies need, and loads of nutrients like calcium and iron. Yum!
