It’s one of our favorite superfoods and is a great source of vitamins K and C, folate, potassium, and fiber. All of these nutrients working together help keep your weight in check and also prevent diseases like cancer. Another healthy, and tasty ingredient in this healthy summer side dish are antioxidants known as “polyphenols”. Even if you can’t pronounce it, you’ll want to get some in your diet since these nutrients prevent many types of cancer, including lung, pharynx, endometrial, pancreatic, prostate and colon cancers. Wow!

Cucumber Avocado Rolls

This dish is always a summer favorite since it has cooling cucumber as the main ingredient. But besides keeping your body cool and hydrated, cucumbers help flush out toxins while infusing your body with potassium, magnesium, and loads of B vitamins. Paired with everyone’s favorite, avocado, these cucumber rolls are super delicious.
