Ingredients
  1. 1/2 pound medium cocktail shrimp
  2. 3 tablespoons olive oil
  3. Juice of 1 lime
  4. 2 tablespoons finely chopped fresh mint leaves
  5. 8 cups tender baby lettuces, such as Bibb, Boston, or Butter
  6. 1/2 cup fresh or frozen peas
  7. 10 thin asparagus spears, cut into bite sized pieces
  8. 2 radishes, thinly sliced
  9. 2 tablespoons goat cheese crumbles
  10. Sprouts, for garnish, optional
  11. Salt and pepper, to taste
Instructions
  1. Combine the shrimp with the olive oil, lime juice, and mint. Season with salt and pepper.
  2. Divide the remaining ingredients between two plates. Top with the shrimp, drizzling extra dressing over the salad. Top with sprouts if desired and serve.
