  1. 4 sweet potatoes (10 ounces each), peeled and cut into 1 inch pieces
  2. 2 ½ tablespoons olive oil
  3. 4 chipotle chiles in adobo sauce, minced
  4. 2 garlic cloves, minced
  5. 2 tablespoons honey
  6. 2 teaspoons cider vinegar
  7. 1 ¼ teaspoons salt, plus additional to taste
  8. 1 teaspoon cumin
  9. ½ teaspoon cinnamon
  10. 6 boneless, skinless chicken breasts (2 lbs.) ,rinsed and patted dry
  11. Chopped cilantro or parsley for garnish (optional)
  12. 8 ounces whole-wheat penne or rotini pasta
  1. Preheat oven to 400. In a medium bowl, toss the sweet potatoes in the olive oil and scatter on the bottom of a roasting pan. Roast for 15 minutes.
  2. In a small bowl, mix together the chiles, garlic, honey, cider vinegar, salt, cumin and cinnamon to make a paste. Rub the paste evenly over each chicken breast.
  3. Place chicken breasts on top of the sweet potatoes and roast until the chicken is just cooked through, about 25-30 minutes. Serve garnished with cilantro or parsley.
  1. Wrap It Up: Turn this dinner into a delicious wrap by slicing or dicing leftover chicken, add some greens, and mash the sweet potatoes (or bring them on the side) for a delicious “spread” for the wrap. Don’t forget to go whole-wheat or whole grain on the wraps!
