Chocolate Banana and Blueberry Chia Seed Pudding

In an hour or two, you have delicious pudding!

  1. 1/2 cup chia seeds
  2. 2 1/2 cups almond milk (I use unsweetened vanilla almond milk,)
  3. 2 Tbsp cocoa powder
  4. 1 tsp vanilla extract
  5. Pinch salt
  6. 1 banana sliced
  7. 1 handful of blueberries
  8. Sweetener to taste – about a squirt of agave nectar.
  1. Mix everything together. Use a whisk or the cocoa is never going to combine with the liquid. Once the mixture seems to be thickening a bit (after a minute or two of mixing), cover and refrigerate.
  2. In an hour or two, you have delicious pudding!
  3. This will last up to a week in your fridge. If it gets too thick, just stir in a splash or two of your almond milk. Enjoy!
