Ingredients
  1. 1 cup cooked or shredded chicken breast
  2. 1/4 cup plain Greek yogurt
  3. 1/2 cup cooked chickpeas, drained
  4. 2 tablespoons coconut flakes
  5. 1 tablespoon curry powder
  6. 2 tablespoons fresh chopped cilantro
  7. Juice of one lime
  8. Salt and pepper, to taste
  9. 8 cups mixed greens
Instructions
  1. Combine all of the ingredients except the mixed greens in a large bowl. Season with salt and pepper. Serve the chicken salad over the greens, and garnish with an additional squeeze of lime and more coconut flakes if desired. Enjoy your Coconut Curry Chicken Salad!
