Ingredients
  1. 8 cups fresh baby spinach or mixed greens
  2. 1 cup dried cranberries
  3. 2 medium pears, chopped
  4. 1/4 cup apple cider vinegar
  5. 1 tablespoon sugar
  6. 1/4 cup finely diced onion
  7. 1/2 teaspoon Worcestershire sauce
  8. 1/2 teaspoon ground mustard
  9. 1/4 teaspoon paprika
  10. 1/4 cup olive oil
  11. 1 tablespoon sesame seeds
  12. 1 teaspoon poppy seeds
  13. 2 tablespoons chopped spiced pecans
  14. 1 cup cooked quinoa (optional)
  15. 1/4 cup crumbled blue cheese, goat cheese or feta cheese (optional)
Instructions
  1. In a large bowl, combine the spinach, cranberries, onion and pears.
  2. In a blender, combine the vinegar, sugar, onion, Worcestershire sauce, mustard and paprika; cover and process until blended.
  3. While processing, gradually add oil in a steady stream. Add sesame seeds and poppy seeds. Pour over salad and toss to coat. Sprinkle with pecans. You can also add quinoa or crumbled cheese on top, or whatever else you’d like!
