RECIPE: Crunchy Veggies and Blue Cheese Salad

Almost any veggie you like will work in this Blue Cheese Salad, as long as you put the hard ones on the bottom. Cauliflower, cucumbers, or cherry tomatoes work. Use what you have on hand and create your own favorite combo.

Ingredients
  1. 2 tablespoons Classic Herbed Vinaigrette
  2. 1/2 cup cooked lima beans, drained
  3. 1/2 cup shredded cabbage
  4. 1/2 cup broccoli florets
  5. 1/4 cup shredded carrots
  6. 1/4 cup blue cheese crumbles
  7. 2 cups baby spinach leaves
Instructions
  1. Divide the ingredients in half. Layer in two pint sized mason jars in the order listed. Seal the jars and store Blue Cheese Salad in the fridge until ready to eat, up to 2 days.
