Ingredients
  1. (2) 4-ounce boneless, skinless chicken breasts
  2. 1 head endive, divided into leaves
  3. 1/2 grapefruit, peeled and sectioned
  4. 1/4 cup toasted walnuts
  5. 3-4 basil leaves, sliced
  6. 4 cups mixed greens
  7. 2 tablespoons olive oil
  8. 1 tablespoons red wine vinegar
  9. 1 teaspoon honey
  10. 1 clove garlic, minced
  11. 1 teaspoon brown mustard
  12. Salt and pepper, to taste
Instructions
  1. Preheat a gas or charcoal grill to medium high heat. Season the chicken breasts with salt and pepper. Spray the grill with cooking spray and grill until cooked through.
  2. While the chicken is on the grill, combine the grapefruit, walnuts, and basil leaves. Spoon the mixture into the endive leaves and serve alongside the mixed greens. To make the dressing, combine the remaining ingredients in a jar with a lid and shake until well combined.
  3. Top the mixed greens with the grilled chicken and serve with the dressing on the side.
