These sweet and chocolatey treats are made with healthy ingredients, yet they taste like an indulgent dessert. High in fiber and antioxidants, Goji Berry makes a great option when you’re looking for something sweet but want to avoid the traditional route of cookies or cupcakes.
- 1 cup pitted dates
- 1/4 cup goji berries
- 1/4 cup sliced almonds or pistachios
- 1/4 cup cocoa powder
- Put the dates and goji berries in bowl and cover with water. Soak for 15 minutes. Drain and put in a food processor with the almonds and cocoa powder. Pulse until well combined and spread in a parchment lined cake pan.
- Freeze for 1 hour, remove parchment and cut into cubes. Store leftovers in the freezer.
