Grilled Caesar Salad with Lemony Shrimp

Grilled heads of Romaine take the classic Caesar salad to a whole new level. A quick and flavorful dressing is lighter than the traditional version, yet still delicious. Lemon flavored grilled shrimp tops off the meal.

Grilled heads of Romaine take the classic Caesar salad to a whole new level. A quick and flavorful dressing is lighter than the traditional version, yet still delicious. Lemon flavored grilled shrimp tops off the meal. Serves 2 Total preparation time: 15 minutes

Ingredients
  1. 2 heads Romaine lettuce, left whole
  2. 1/2 pound raw shrimp
  3. 1 tablespoon olive oil
  4. Juice of 1 lemon
  5. 10 cherry tomatoes, halved
  6. 2 tablespoons grated Parmesan cheese
Dressing
  1. 2 tablespoons olive oil
  2. 1 clove garlic, minced
  3. 1 teaspoon Dijon mustard
  4. 1 teaspoon plain yogurt
Instructions
  1. Preheat a gas or charcoal grill over medium heat. Toss the shrimp with the olive oil and lemon juice and season with salt and pepper. Skewer onto metal skewers. Brush the lettuce heads lightly with olive oil.
  2. When the grill is ready, lay the lettuce heads and shrimp skewers on the grill. Grill the shrimp until pink, about 1-2 minutes per side. Grill the lettuce until lightly charred.
  3. Combine the dressing ingredients in a jar or closed container and shake until well combined.
  4. Serve the Grilled Caesar Salad with the shrimp, tomatoes and Parmesan. Drizzle with the dressing before serving.
