Trying to eat healthy when you’re not at home isn’t always easy, but with the jarred salad technique, you can prepare your salad by layering all the ingredients in the jar. Simply store in the fridge until you’re ready to eat. This easy salad relies on healthy, canned or jarred ingredients you may already have, so it requires little to no prep. This recipe fills two pint sized mason jars, but you can use larger jars if you’d like a bigger salad.Serves 2

Ingredients
  1. 2 tablespoons Classic Herb Vinaigrette
  2. 1/2 cup cooked white beans, drained
  3. 1/2 cup shredded carrots
  4. 8 kalamata olives, pitted
  5. 4 cherry tomatoes, halved
  6. 1 cup cooked and chopped chicken breast
  7. 2 cups Romaine lettuce
Instructions
  1. Put half of the salad dressing in the bottom of a pint sized mason jar. Add half of the beans, followed by half the carrots, olives, tomatoes, chicken and Romaine. Layer the rest of the ingredients in another jar. Close the jar and store in the fridge until ready to eat.
