Lemon Basil Shrimp and Pepper Salad
This easy and elegant shrimp salad combines crunchy peppers and chilled lemon basil shrimp. A little bit of flavorful feta cheese brings it all together for a meal that is sure to please!

Ingredients
  1. 1/2 pound medium cocktail shrimp
  2. 3 tablespoons olive oil
  3. Juice of 1 lemon
  4. 6 basil leaves, sliced
  5. 8 cups baby spinach leaves
  6. 1/4 cup chopped roasted peppers
  7. 1/4 cup crumbled feta cheese
  8. Salt and pepper, to taste
Instructions
  1. Combine the shrimp with the olive oil, lemon juice and basil. Season with salt and pepper.
  2. Divide the spinach and peppers between two plates. Top with the shrimp, drizzling any extra dressing from the shrimp on the salad. Top with the feta cheese and serve.
