Mediterranean Salad with Grilled Shrimp and Roasted Peppers

Ingredients
  1. 1/2 pound raw shrimp
  2. 2 tablespoons olive oil
  3. Juice of 1 lemon
  4. 8 cups mixed greens
  5. 1/4 cup kalamata olives, pitted
  6. 1/2 cup marinated mushrooms
  7. 1/2 cup chopped roasted peppers
  8. 1/2 cup sun dried tomatoes
  9. 1/4 cup feta cheese crumbles
  10. 4 tablespoons Lemon Vinaigrette
  11. Salt and pepper, to taste
Instructions
  1. Combine the shrimp with the olive oil and lemon juice and season with salt and pepper. Preheat a gas or charcoal grill over medium heat. Thread the shrimp on skewers and grill for 2-3 minutes per side.
  2. Divide the remaining ingredients between two plates and top with the shrimp and dressing. Serve and enjoy!
