This soup is one of our reader favorites. It has lots of protein from the lean chicken, and lots of heart healthy fats from the pretty avocado. But some of the “hidden” nutrients come from that green cilantro that has vitamin K, as well as small amounts of folate, potassium, manganese and choline. Wow! Cilantro, which is a metabolism booster, also has the antioxidant beta-carotene in it. Enjoy this soup alone or with a side salad for well rounded dinner!
Need some spice in your life? Well this soup has some kick from the spices curry, ginger, and red pepper. Curry is known for its long list of benefits like prevention of cancer, protection against heart disease, reducing Alzheimer’s disease symptoms, easing pain and inflammation, boosting bone health, and protecting the immune system from bacterial infections. And it’s great for aiding in digestion with its high fiber content. Add this to the menu this week!
