Here’s a 30 minute recipe for healthy and tasty black bean enchiladas filled with creamy avocado slices, all covered in green chile enchilada sauce!

Ingredients
  1. 8-9 6 inch whole wheat flour tortillas
  2. 1 can black beans
  3. 2 avocados, sliced or diced
  4. ½ red onion, diced
  5. 1 teaspoon garlic salt
  6. 1 teaspoon cumin
  7. 1 teaspoon chile powder
  8. ⅓ cup cilantro leaves, roughly chopped
  9. 1 roma tomato, diced
  10. 1 10-ounce can green chile enchilada sauce
  11. 1 7-ounce can diced green chiles
  12. ½ cup shredded Mexican blend cheese or queso fresco
Instructions
  1. Preheat oven to 400. Place enchilada sauce and green chiles in a medium sauce pan and simmer over medium-high heat while you prepare the enchiladas.
  2. Add black beans, avocados, onions, garlic salt, cumin, chile powder, cilantro and optional tomatoes to a large bowl and stir to combine.
  3. Spoon about 3 tablespoons of black bean-avocado mixture into the center of each tortilla, roll it up tightly and place in dish with some enchilada sauce under the enchiladas. Lay each side by side, seam side down.
  4. Pour remaining sauce and sprinkle cheese over rolled enchiladas. Bake 15-20 minutes until cheese is bubbly. Serve warm with pico de gallo, nachos, beans or any Mexican sides you enjoy!
