Yep, you read that right! This TASTY appetizer gets healthy by BAKING instead of frying these baked onion rings. Yummmy!

Ingredients
  1. 1 cup all-purpose flour
  2. 1 tablespoon of your favorite spice combination: oregano, garlic, cumin, pepper, chili.
  3. 1 1/2 cups Panko bread crumbs
  4. 1/2 cup grated Parmesan
  5. 2 onions, sliced 1/2-inch thick and separated into rings
  6. 2 large eggs, beaten
Instructions
  1. Preheat oven to 400 degrees. Lightly oil a baking sheet or coat with nonstick spray.
  2. In a large bowl, combine flour and spices; set aside.
  3. In a large bowl, combine Panko and Parmesan; set aside.
  4. Working in batches, dredge onion rings in flour mixture, dip into eggs, then dredge in Panko mixture, pressing to coat.
  5. Spread onion rings in an even layer on the prepared baking sheet; coat with nonstick spray. Place into oven and bake until golden brown and crispy, about 20-25 minutes.
  6. Serve and enjoy!
