Broccoli is a great source of VITAMIN C which is a powerful antioxidant and protects the body from damaging free radicals. WOW! And they’re in this DELICIOUS salad!

Ingredients
  1. 4 cups fresh broccoli florets
  2. ½ cup shredded carrots
  3. ¼ cup diced red onion
  4. 2 large apples, finely chopped
  5. ½ cup pecans, coarsely chopped
  6. ½ cup dried cranberries
Dressing ingredients
  1. 1/4 cup low fat buttermilk
  2. ½ cup low fat Greek yogurt
  3. 2 Tablespoons lemon juice
  4. 1 Tablespoon coconut sugar
  5. ¼ teaspoon salt
  6. ⅛ teaspoon pepper
Instructions
  1. In a large bowl combine broccoli, carrots, red onion, apples, pecans, and dried cranberries.
  2. To make the dressing: Whisk together buttermilk, Greek yogurt, lemon juice, sugar, salt and pepper.
  3. Add the dressing to the salad and toss to coat. Chill until ready to serve.
  4. Enjoy!
