Ingredients
  1. 1/4 medium head of red cabbage, chopped and shredded into bite size pieces (about 5-6 cups)
  2. 1/4 medium head of white cabbage, chopped and shredded
  3. 2 crunchy Granny Smith Apples, chopped into thin strips
  4. 2 carrots, shredded
  5. Poppy Seeds (crunchy topping)
  6. 1/4 cup Apple Cider Vinegar
  7. Juice from 1 Lemon
Instructions
  1. Shred all ingredients in equally sized bites/strips.
  2. Toss all ingredients together in a big salad bowl
  3. Sprinkle with poppy seeds
  4. Drizzle with apple cider vinegar and lemon juice
  5. Toss salad again and serve!
