Here’s a healthy SIDE that can be packed up for LUNCH with leftovers. This cilantro lime brown rice is hearty and flavorful!

Ingredients
  1. 1 tablespoon olive oil
  2. 2 cups brown rice
  3. 3 1/2 cups water
  4. 1 teaspoon kosher salt
  5. Juice and zest of one lime
  6. 1/2 cup loosely-packed cilantro, minced
  7. 1 cup red bell pepper, sliced thin
Instructions
  1. In a saucepan, heat olive oil over medium heat. Add rice and stir to coat.
  2. Add in water, salt, lime juice, lime zest, and bell peppers. Bring to a boil, reduce heat, cover and simmer for 30-35 minutes, or until liquid is absorbed.
  3. Remove from heat and let rest for 5-10 minutes. Fluff rice with a fork, then stir in the chopped cilantro. Enjoy!
