RECIPE: Grown Up Grilled Cheese on Cauliflower Bread

You’ll be hard-pressed to find somebody who doesn’t love grilled cheese! 

Grown Up Grilled Cheese on Cauliflower Bread

  1. 1 small head cauliflower, cut into small florets (about 3 cups cauliflower rice)
  2. 1 large egg, lightly beaten
  3. ½ cup shredded skim mozzarella
  4. ½ tsp. fine grain sea salt
  5. ¼ tsp. ground black pepper
  6. 1 Tbsp. coconut oil, room temp.
  7. 3 oz. shredded low fat sharp cheddar cheese, room temp.
  1. 1. Preheat the oven to 450°F, and place a rack in the middle of the oven. Line a baking sheet with parchment paper, and liberally grease it with olive oil. Set aside.
  2. 2. In a food processor (or with a coarse cheese grater), rice the cauliflower florets. It should be evenly chopped but not completely pulverized.
  3. 3. Transfer cauliflower rice to a microwave-safe dish, and microwave on high for 8 minutes, until cooked.
  4. 4. Place the cauliflower rice in a tea towel, and twist it to squeeze as much moisture as possible (about a cup of liquid). This is very important. The cauliflower rice needs to be dry; otherwise you’ll end up with mushy dough.
  5. 5. Transfer the cauliflower rice to a mixing bowl. Add egg, mozzarella, salt, and pepper. Mix well.
  6. 6. Spread cauliflower mixture onto the lined baking sheet, and shape into 4 squares. Place in the oven to bake for about 16 minutes, until golden brown.
  7. 7. After being removed from the oven, let the cauliflower slices cool for 10 minutes before peeling them off the parchment paper. Be careful not to break them.
  8. 8. Heat a pan over medium heat. Put coconut oil on one side of each slice of cauliflower crust (preferably the top part) to begin assembling grilled cheese.
  9. 9. Place one slice of bread in the pan, oil side down. Sprinkle with the cheese, and top with remaining slice of cauliflower bread, oil side up. Turn the heat down a notch, and cook until golden brown, about 2–4 minutes. Gently flip, and cook until golden brown on the other side, about 2–4 minutes.
