For the sauce
  1. ¼ cup low sodium soy sauce
  2. ¼ cup water
  3. 2 tablespoons olive oil
  4. ½ teaspoon sesame oil or olive oil
  5. 3 tablespoons Sriracha or hot sauce
  6. 3 tablespoons honey
  7. ½ tablespoon rice vinegar
  8. ¾ teaspoon garlic powder
  9. ¼ teaspoon salt
  10. ¼ teaspoon pepper
For the Stir Fry
  1. 1 lb Chicken breasts, cut into thin strips
  2. 8 ounces brown rice or rice noodles
  3. 1 red bell pepper, sliced thin
  4. 1 cup thinly sliced red cabbage
  5. 2 cups thinly sliced cabbage
  6. 1 cup matchstick carrots
For the Garnish
  1. Cilantro
  2. Sliced green onions
Instructions
  1. 1. In a medium bowl, whisk together the sauce ingredients. Add ½ cup of this prepared sauce to a large bag along with chicken and let marinate overnight or at least for 1 hour. Reserve remaining sauce in an airtight container.
  2. 2. Heat 1 tablespoon of olive oil over medium high heat in a large skillet. Remove chicken from marinade and discard the excess marinade.
  3. 3. Add chicken to preheated skillet and saute just until no longer pink on one side. Add vegetables and sauté for 2 minutes. Stir occasionally.
  4. 4. Whisk sauce to recombine and add to skillet. Simmer until thickened and vegetables are tender-crisp.
  5. 5. Meanwhile, cook rice noodles according to package instructions.
  6. 6. Serve chicken and vegetables over rice noodles.
  7. 7. Garnish with cilantro and green onions.
  8. Enjoy!
