This FLAVORFUL pea & parmesan orzo dish is healthy and tastes good as a side dish, or even for lunch for the next day – yes please!

Ingredients
  1. 1 cup whole grain orzo pasta
  2. 1 tablespoon olive oil
  3. 2 cloves garlic, minced
  4. 1 onion, diced
  5. 1 tablespoon all-purpose wheat flour
  6. 1 cup low fat milk
  7. 1 1/2 cups peas, roughly chopped
  8. 1/2 cup grated Parmesan cheese
  9. Kosher salt and freshly ground black pepper, to taste
Instructions
  1. In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
  2. Heat olive oil in a saucepan over medium heat. Add garlic and onion, and cook, stirring frequently, until onions have become translucent, about 2-3 minutes.
  3. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in milk, and cook, whisking constantly, until slightly thickened, about 3-4 minutes.
  4. Add peas and cook, about 2-3 minutes. Stir in Parmesan until melted, about 1 minute. Add orzo and gently toss to combine; season with salt and pepper, to taste. Serve immediately. Enjoy!
