Here’s a healthy side that is full of FIBER, Vitamin A & C…and it’s delicious! Our roasted butternut squash will having you saying, “Pass the bowl, please!”

Ingredients
  1. 3.5 Pound Butternut Squash
  2. ½ Cup of Parmesan Cheese
  3. Olive Oil
  4. Salt
  5. Pepper
  6. Chopped Parsley for garnish
Instructions
  1. Preheat the oven to 375 and line a cookie sheet with parchment paper.
  2. Peel the squash and cut into 1/2 inch cubes.
  3. Place the squash in a large bowl and add a pinch of salt and pepper, olive oil, and cheese. Stir to combine. Place squash on the cookie sheet and bake for 15 minutes and then flip squash and cook another 15 minutes. Garnish with parsley.
  4. Enjoy!
