This is a great side dish or LUNCH dish that’s had a skinny makeover and is super DELICIOUS! Skinny Coleslaw is going to be your new potluck favorite!

Ingredients
  1. 4 cups red cabbage, shredded
  2. 5 cups green cabbage, shredded
  3. 3 medium carrots, grated or shaved
Dressing
  1. 1 cup Greek yogurt, low fat
  2. 1/4 cup water
  3. 1 1/2 tbsp apple cider vinegar
  4. 1 tbsp maple syrup or raw honey
  5. 1 tbsp organic mayonnaise
  6. 2 tsp olive oil, extra virgin
  7. 1 tsp salt
  8. 1/4 tsp coriander, ground
  9. 1/4 tsp ground black pepper
Instructions
  1. In a large bowl, add cabbage and carrots.
  2. In a small bowl, whisk Coleslaw Dressing ingredients. Add to a bowl with cabbage and carrots, and gently toss to coat. Serve chilled. Enjoy!
