Ingredients
  1. 3 ripe organic Bosc pears (peeled, cored and mashed)
  2. 1/4 cup raw honey
  3. 1 egg, lightly beaten
  4. 1 teaspoon organic vanilla extract
  5. 1/4 cup lowfat yogurt
  6. 1 1/2 cups organic whole wheat flour
  7. 1/2 cup organic coconut sugar
  8. 1 teaspoon organic ground cinnamon
  9. 1/4 teaspoon organic ground nutmeg
  10. 1/2 teaspoon baking soda
  11. 1/8 teaspoon baking powder
  12. 1/4 teaspoon salt
Instructions
  1. Preheat oven to 325 degrees F.
  2. Combine mashed pears, honey, egg, vanilla extract and yogurt in a large mixing bowl.
  3. Stir together flour, coconut sugar, cinnamon, nutmeg, baking soda, baking powder and salt in a separate mixing bowl.
  4. Gradually add flour mixture to wet ingredients, stirring until just combined.
  5. Pour batter into an oiled 5″ x 9″ loaf pan.
  6. Bake for 1 hour or until toothpick inserted into center comes out clean.
  7. Enjoy!
