This is an elegant side dish that is DELICIOUS and one that you don’t have to feel guilty about since it’s on the SKINNY side. Pass those skinny scalloped potatoes, please!

Ingredients
  1. 4 cups thinly sliced raw potatoes
  2. 1 onion
  3. 1 tablespoon chopped parsley
  4. 3 tablespoons whole grain flour
  5. 1/8 teaspoon pepper
  6. 1 1/2 teaspoons salt
  7. 3 tablespoons low cholesterol margarine
  8. 1 1/2 cups skim milk
Instructions
  1. 1. Layer potatoes and onions in casserole or oven-proof skillet, sprinkling flour between each layer.
  2. 2. Heat milk and margarine in a small saucepan and season with salt, pepper, and parsley. Pour sauce over all layers.
  3. 3. Bake 1 hour covered with foil at 350° F. Remove foil cover and bake additional 30 minutes.
  4. 4. Enjoy!
