Here’s a hearty BRUNCH dish that’s full of CALCIUM, folate, and iron from that superfood spinach – wow! Spinach quiche cups are going to be your new favorite weekend treat

Ingredients
  1. Olive oil
  2. 10 ounces fresh spinach, chopped
  3. 4 eggs
  4. 1 cup shredded low fat cheese
  5. 8 oz mini mushrooms, chopped
  6. 1-2 Tbsp lowfat milk
  7. Salt and Pepper, to taste
Instructions
  1. Preheat the oven to 375F.
  2. Heat a little oil in a large skillet. Saute the mushrooms until they are soft, about 5-6 minutes. Set aside.
  3. Place the spinach in a deep pan or in the skillet that you used for the mushrooms. Add a little water and using medium heat, cook the spinach just until wilted, about 3-4 mins. Use a spatula to pack in the spinach. Drain the excess water really well. In a large mixing bowl, whisk the eggs until combined. Add the cooked mushrooms, spinach, cheeses and milk to the eggs. Mix well. Season to taste. Divide evenly among the muffin cups. Bake for about 18-23 minutes, depending on size of muffin cups, or until it’s well set and a tester/toothpick inserted in the center comes out clean. Leave in the pan for a few minutes or just until it’s cool enough to handle. Enjoy!
