Thai Crispy Lettuce Wraps with Peanut Dipping Sauce

Here’s a recipe that will help you use up that extra lettuce sitting in your fridge while enjoying an easy, tasty and healthy meal! These lettuce wraps don’t involve turning on the stove or oven. They also look so colorful and beautiful for when you’re entertaining or going to a potluck. Since they are vegetarian, everyone can enjoy them!

Here’s a recipe that will help you use up that extra lettuce sitting in your fridge while enjoying an easy, tasty and healthy meal! These lettuce wraps don’t involve turning on the stove or oven. They also look so colorful and beautiful for when you’re entertaining or going to a potluck. Since they are vegetarian, everyone can enjoy them!

For the peanut dipping sauce
  1. 1 cup light coconut milk
  2. 3 Tbsp smooth peanut butter
  3. 2 Tbsp low-sodium soy sauce
  4. 1 Tbsp honey
  5. 1 Tbsp sliced fresh ginger
  6. 1 clove garlic
  7. 1/4 tsp crushed red pepper flakes
For the lettuce wraps
  1. 20 large lettuce leaves
  2. 10 oz extra firm tofu, drained, patted dry, and sliced into finger-sized pieces
  3. 1/2 red bell pepper, thinly sliced
  4. 1/2 yellow bell pepper, thinly sliced
  5. 1 small cucumber, thinly sliced
  6. 20-25 Thai basil leaves (or regular basil)
  7. 1/2 cup peanuts (garnish)
Instructions
  1. Blend all peanut dipping sauce ingredients together. Sprinkle with some peanuts. Set aside until ready to serve.
  2. To assemble the lettuce wraps, place several pieces each of the tofu, red pepper, yellow pepper and cucumber cross-wise at the leafy end of the lettuce leaf (not the crunchy end). Top with 1-2 Thai basil leaves. Fold sides of lettuce in, then roll down toward the crunchy end of the leaf. Top with peanuts as garnish. If you prefer, you can also serve all the components and have each person assemble their own wraps.
  3. Serve with peanut dipping sauce in individual bowls. Double-dipping will be necessary! Enjoy.
