Ingredients
  1. 1 cup thinly sliced carrots
  2. 1 sweet potato, peeled and thinly sliced
  3. 1 yuca, peeled and thinly sliced
  4. coconut cooking oil spray
  5. dried herbs (like oregano or rosemary)
  6. 1 ripe, fresh avocado
  7. 2 roasted garlic cloves
  8. 2 Tbsp. fresh cilantro, minced
  9. 2 Tbsp. sriracha sauce
Instructions
  1. Place vegetable fries on a baking sheet. Season with coconut cooking spray & dried herbs for seasoning. Bake for 20 minutes at 400 degrees, toss and bake for another 15-20 minutes.
  2. While the vegetable fries are in the oven, place the avocado, garlic, cilantro, and Sriracha sauce in a food processor or blender.
  3. Serve the fries with this delicious fresh and creamy avocado dip.
  4. *Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados, adjust the quantity accordingly. Enjoy your avocado dip!
