Zucchini Noodles With Leek Tomato Sauce

  1. 1 large zucchini
  2. 1/2 white onion, chopped
  3. 1 leek, chopped
  4. Salt and pepper to taste
  5. 1 tablespoon olive oil
  6. 1 cup tomato purée
  7. 1 garlic clove, minced
  8. 1/2 pound of turkey meatballs (optional)
  9. Fresh basil and herbs for garnish
  1. Slice zucchini into ribbons or spiral noodles. You can do this a few ways: a mandoline, a spiral peeler or spiralizer, or simply julienne cut the zucchini into noodle-like strips. Set aside.
  2. Season and bake turkey meatballs in the oven on a tray covered in aluminum foil and sprayed with olive oil (optional).
  3. Heat olive oil in a saucepan over medium-high heat.
  4. Add the onion, garlic and leek. Season with salt and pepper and cook until the onion is translucent.
  5. Add the tomato purée to the saucepan and mix.
  6. Cook, stirring, until the mixture thickens to your liking. Add the cooked turkey meatballs (optional), some basil and/or other herbs.
  7. Pour the leek marinara sauce over the zucchini and dig in! The warmth of the sauce will soften the zucchini.
